Ingredients

  • 6 c oatmeal
  • 6 c whole wheat flour
  • 4 1⁄2 c brown sugar
  • 2 T baking powder
  • 1 T baking soda
  • 2 c butter or vegetable oil
  • 2 T vanilla
  • 6 T yogurt or soy yogurt
  • 6 c Milk or soy milk

Instructions

Preheat the oven to 375 degrees

Variation: Jam-filled Muffins: When filing the greased muffin trays, fill them only about ¼ full with batter first. Put a little bit of jam in the middle before covering the jam with more batter. Be sure not to put too much jam in the middle-it can’t touch the edges since it burns quickly. Also remember not to fill up the muffin trays more than ¾ of the way – these muffins rise up a bit.
