Ingredients
- 2 c peeled diced potato
- 1 cauliflower cut into florets and steamed
- 1⁄2 c green peas
- 1 t ginger paste
- 1 t fresh green chili
- 2 T chopped fresh cilantro leaves
- 1⁄2 t mustard seeds
- 1⁄2 t cumin seeds
- 1 t asafetida
- 1 t tumeric powder
- 10 curry leaves
- 2 T Vegetable oil
- 1 c white poppy seeds
- 1⁄2 c raw unsalted cashews
- 1 green chilli
Instructions
Heat oil in a pan, add mustard seeds, wait till they pop and then add cumin seeds, asafetida, curry leaves and chili ginger paste.
Add the vegetables, turmeric and salt. Stir fry for two minutes, sprinkle with ½ cup water, cover and simmer low heat for 5 minutes.
Remove from heat and add the sauce.
Garnish with chopped cilantro.
Instructions for Syrup
Powder the poppy seeds and cashews separately. The finer the poppy seeds are grounder the smoother the sauce will be.
Soak these powders in separate bowls for two hours and then blend them with a ½ tsp salt and a green chili until smooth and fluffy.
