Curried Vegetables

This is a creamy South Indian style curry which contains coconut as well as spice

Recipes Vegetables
Ingredients
- 1⁄2 c Chopped carrot
- 1⁄2 c Chopped potato
- 1⁄2 c Chopped pumpkin
- 1⁄2 c Chopped eggplant
- 1 c Coconut cream or shredded coconut
- 1 green chili, seeded and finely chopped
- 1 red chile seeded and chopped
- 1 t cumin seed
- 1 t tamarind paste
- 1⁄2 t salt to taste
- 1⁄2 c yogurt
- 1 handful of curry leaves
Instructions
Chop all the vegetables evenly, and cook with little water until they begin to soften.
Add turmeric and sal
Grind coconut, green chillies, red chillies, cumin seeds, and tamarind paste finely in yogurt to make a masala
Add the ground masala to the cooked vegetables, and let it cook until the flavour comes out.
Garnish with curry leaves
